Gluten Free Banana Bread

I love to make gluten free foods that actually taste good. This is certainly one of them!

Directions

1/2 cup softened butter (If butter bothers you use sunflower oil or coconut oil)
1 cup King Arthur Gluten Free Flour
1/2 cup Flaxseed meal (if you don’t want the faxseed, just add 1/2 cup four)
1 1/4 cup of sugar (add a little more if you are using organic – it is less sweet)
2 eggs
1 teaspoon vanilla
1/3 cup buttermilk (don’t have buttermilk, just add 1 1/2 tablespoon lemon juice to milk – I use Almond Milk with lemon juice )
1 teaspoon baking powder
3/4 teaspoon baking soda
3 small or 2 large old bananas – smashed or cut real fine

Optional …

3 tablespoons of applesauce or plain yogurt.  (for extra moisture if in dry climates)
1/2 cup golden raisins
1/3 cup chopped walnuts
Chocolate shavings or chocolate chips to the top.

Bake @ 350 for 45 to 50 minutes.

* I add Flaxseed meal and chocolate because they are MUFA’s.   ENJOY ?

It starts with some good wholesome ingredients

Mix sugar and butter

Mix dry ingredients

I use coconut oil and gluten free flour to prep pan. It works great!

Pour batter in pan, I do add a bit of dark chocolate sometimes because it is a MUFA (explanation above) and it tastes so good ?


Cut after cooling for about 20 minutes if you can wait that long. Delish!
